Corn and Avocado Salsa Such a light and delicious treat. Not your usual salsa full of diced tomatoes, a little spin on a wonderful classic. Great to make when tomatoes are not in season (I say this while shedding a slow rolling single tear... I love tomatoes!) You can make this simple salsa quicker too as there is much less chopping and it is ready in just a few minutes. Awesome as a side dish to fish tacos, grilled chicken or as a topping for nachos or chili. Ingredients: 1 can of sweet corn rinsed and drained 1 ripe but firm avocado diced 1/2 of a red onion, finely diced 1 clove of garlic minced 1 small handful of fresh cilantro chopped Juice of one lime Sea Salt and Freshly ground pepper to taste Drizzle of avocado oil or extra virgin olive oil To add a nice spicy kick: Add a finely chopped jalapeno pepper or a couple dashes of your favorite hot sauce. Steps: Mix all of the above together. That's it! Serves 4 - double or triple it for a crowd or if you're just that hungry!
